Quick and easy Jam Drops

My kids love to bake.
Being a self-confessed control freak, letting them do their thing in the kitchen sends me into a crazy Mama state. However, I have come to realise that I need to let it go and let them at it. Mess can be cleaned up…even if it does take me hours…

Last week they wanted to make their favourite biscuits – Jam Drops.

Here is our quick and easy recipe, perfect for school lunches.
Makes approximately 24.

INGREDIENTS:
125g butter  – softened
1/2 cup caster sugar
1/2 teaspoon vanilla extract (we actually used essence)
1 egg
2 cups plain flour
1 teaspoon baking powder
1 tablespoon milk
1/3 cup jam (Any will do. We used strawberry as it’s Spencer’s fave!)

METHOD:
Preheat your oven to 180°C. Line a few trays with baking paper.
Beat butter, sugar and vanilla in a bowl with an electric mixer until light and creamy.
Add in the egg and mix until all combined.
Sift in the flour and baking powder.
Add milk and stir until just combined.
Form dough into small balls and place onto prepared trays.
Using your hand, flatten biscuits a little, allowing room for spreading.
Make a well in the centre of each biscuit and fill with jam.
Bake for 10 to 15 minutes, until lightly golden all over.

Set them aside to cool for a few moments before devouring.
Enjoy!
